INGREDIENTS
SERVES 1
- 1 tbsp lime juice
- 3 sprigs cilantro
- 1 tsp Onion, Green
- 1 clove garlic
- 1/2 cup Brown Rice
- 1 cup Asparagus, Steamed
- 1 thin Avocado Slices 2-3
- 3 oz Shredded Carrots
DIRECTIONS

Make dressing by mixing the lime juice, chopped cilantro, green onion and minced garlic. Set aside.

Spread rice over 1 whole-wheat flour tortilla, top with asparagus, avocado & shredded carrots. Drizzle dressing over veggies.

Optional: top with 1 Tbsp Greek yogurt or reduced fat sour cream
